Caramel Apple Pecan Pie

On this Thanksgiving eve, I took the big boys to see Catching Fire. The movie was excellent. At times hard to watch but very well done. Maybe even better than the first one.

Then I came home to bake a pie.  I love this pie.  I am not a big pie person but when you add caramel and nuts, you begin to speak my language.  I got this great recipe from Dixie Delight.

For Pie:
1 pie crust
1/3 c sugar
3 T flour
1t cinnamon
1/8 t salt
6 c thinly sliced apples
For Topping:
1 c brown sugar
1/2 c flour
1/2 c quick cooking rolled oats
1/2 c butter, slightly softened
Finishing Touch:
1/2 c chopped pecans
1/2 c caramel ice cream topping (I use more, never enough caramel)

1. Roll pie crust into 9-inch pie plate and cook according to directions.
2. In large bowl, stir together sugar, flour, cinnamon and salt. Add apple slices and gently toss until coated. Transfer to pie plate.
3. Mix together sugar, flour, and oats for topping.  Cut butter and sprinkle over pie.
4. Cover edge of pie with foil and bake at 375 for 25 minutes.  Remove foil and bake additional 25 minutes.
5. Remove from oven and sprinkle with pecans and drizzle with caramel.

Eat for breakfast, lunch and dinner.  It is that good.  Enjoy

Griffin is Thankful

So my thankful conversation with Griffin goes like this:

Me: Hey, Griffin, what are you thankful for this year?
Griffin: Milk!
Me: What?
Griffin: I'm thankful for milk.
Me: Anything else?
Griffin: Turkey.
Me: Anything else?
Griffin: Nope, just milk and turkey.

That was not what I expected.  Such a silly boy. He is not even a big fan of milk.
I am thankful for Griffin. I am thankful for his sweet little voice (that has done so well at speech that he no longer qualifies), his contagious laugh, that he still loves to snuggle and that he is always so happy.  One of my favorite things about Griffin that he appreciates everything.  If I were to give him a leaf (or a glass of milk) he would be so sincerely thankful. I am thankful every day for my sweet "pumpkin butter".

Trevor is thankful

Trevor is thankful for "a lot".
He is thankful for our trip to Disney and all the fun and memories we made there.
He is thankful for the lake house and our everyday home.
He is thankful for warm meals and warm clothes.
He is thankful for his mom, dad and entire family.
I am thankful for Trevor. He gave me my greatest title ever, Mom. I am thankful for his calm, insightful personality. I am thankful for his thoughtful, kind nature.

Nolan is Thankful

Nolan is thankful
for spending time with family at our new camp.
He is thankful for having fun.
I am thankful for Nolan's energy and spunk {when it is channeled in an appropriate way}. I am thankful that he loves hockey so much and has taught me to absolutely love the sport. I am thankful I get to watch him play the sport he adores. I am thankful he still likes to snuggle with me and sleep in our room.

Beautiful Weekend

It was an absolutely beautiful weekend.
 This may be my favorite picture I have taken up at camp. Such a calm beautiful day Saturday was on Long Pond. {I have also been trying to play with the settings on my camera.  I am trying to take the majority of my pictures in manual mode and it has been fun.  Not to mention the results are much better.}

Anyways, it was a working weekend at camp.
We were working to get rid of all the hideous circa 1980's wallpaper. Isn't this lovely?

This morning I am off to take this overgrown dog to the groomers.

The Hockey Season has begun

It is hard to believe that Nolan has been skating/playing hockey for more than half of his 10 years. Nolan has been on a hockey team for the last 5 years.

He has come a long way since he first laced up his skates and skating/stumbled onto the ice at three years old.

It has been so much fun to watch him play and grow as a hockey player. This weekend he had his first scrimmage of the season. It was thrown together at the last moment and they played {with many missing players} against a local travel team. Nolan got the only goal for the team.  We are so proud of him and so looking forward to this season. It is going to be a great season for him.

We are looking forward to sitting rink side cheering on our favorite hockey star.

Five on Friday

Rob is growing a mustache for Movember to raise money for men's cancer awareness.  I know the cause is great but I am not liking, not one bit, the 'stache Rob is sporting.  Can't wait for December 1, so it is gone!
I just finished reading Silver Sparrow. I had a hard time putting this one down.  Such a good book, what do I read now?
Today Trevor had a follow up appointment from his surgery. His ear looks great which is a huge blessing. He did not want to have  third surgery on this ear. Unfortunately, his hearing has not improved and is below where it should be. It is not the end of the world but the Doctor did tell Trevor it is unlikely he would ever be able to be a pilot with the history of his ears and the hearing loss. He was disappointed but he is okay with it.
I can't believe it is the middle of November.  Hello... time where are you going? Good news is that I have already started my Christmas shopping!
Now that travel soccer is over, our weekends have freed up. Now what do we do with all our free time?  House work, yard work... none of that seems like much fun.

Disney Phone Dump

I know, we have been back from Disney for a month now. The kids remind me daily that we have been home too long and it is time to go back.

I was looking at my  phone and have a few picture I should have included with my Disney trip.  And if it is not on the good old blog, well then its like it never happened. Before I started blogging in 2009, we have almost no idea of the chronological order of events. Anyways, I digress...

This Weekend

This weekend we took pictures of the boys in hopes to get a good picture for your Christmas card.  I did indeed get one, it is not perfect, but it is fine.
This weekend we celebrated my sister.  Friday night we had a great surprise party, that was truly a surprise, at my home for her birthday.

This weekend Nolan has had hockey practice both Saturday and Sunday.  This week he has something like 6 practices.  Hockey is back!
This weekend we set our clocks back and I am very sad.  I hate it getting dark at 4 in the afternoon.

This weekend grades closed at the middle school and Trevor once again made honors. We are very proud of him since he is in a very advanced math class that is a challenge.
This weekend I got to go shopping with my mom and sister.  I am starting to think about Christmas.

This weekend was a very nice weekend.
